Where food is an obsession, the kitchen is a battleground, and spice levels are a constant debate. (Because let’s be real—our spicy level is high, and not everyone is built for this life.)

At The VickerEats, we don’t just cook—we argue over seasoning, side-eye each other’s spice tolerance, and somehow always end up making the best food ever. What started as “let’s just try making this at home” quickly turned into “we should probably open a food truck, because no one else is doing it like this.”

We’ve burned our hands (mostly me), tested our patience (mostly James dealing with me), and perfected flavors that will change your life. One day, you’ll see our food truck rolling up, serving the best homemade meals you’ve ever had.

Until then, we’ll be in the kitchen—James on the grill, me doing everything else, and both of us making sure he never calls chow mein ‘noodles’ again.

Now, let’s take it back to where this delicious chaos all started…

It All Started with Chow Mein…

After James and I got married, I left New York and moved to Florida to start our new life together. And like any good wife, I wanted to cook for my husband.

So, the first meal I made? Chow mein.
James’ reaction? Confusion.
“What’s this?” he asked.

I was shook. This man—fully grown, functioning in society—had never heard of chow mein. He only knew about “noodles.” That was the moment I realized we were about to have a serious cultural food exchange.

His first meal for me? Oh, he went gourmet. I got a full spread:
✔️ Chicken Marsala
✔️ Wild Rice
✔️ Hasselback Potatoes
✔️ Green Beans & Asparagus

Meanwhile, I had made him noodles. 🤦🏽‍♀️

That’s when I knew: this marriage was about to be a food journey for both of us.

From Eating Out to Making Everything from Scratch

After a few rounds of cooking and eating out, James had a brilliant idea.

“What if we just started making everything from scratch?”

At first, I thought, okay, sure, that sounds fun. Next thing I knew, I was elbow-deep in flour, grinding spices, testing marinades, and—most importantly—frying chicken like my life depended on it.

Because let’s be real: chicken is what we make more than anything.

We started experimenting with everything—from Guyanese-style Chinese chicken to homemade pizza dough. Some dishes were instant wins, while others… well, let’s just say not all ideas should be mixed together.

One time, I accidentally combined two completely different recipes half and half, thinking, what’s the worst that could happen?

Answer? Chaos. Absolute chaos.

James was looking at the dish like it was a science experiment gone wrong. I was standing there, full of regret. But guess what? He had to eat it anyway—because he’s the official Forced Taste Tester™.

The VickerEats Kitchen: A Team Effort… Sort Of.

Let’s be real—James helps, but I do more. 😂

👩🏽‍🍳 Me: I handle the prep, seasoning, cooking, and making sure everything comes together. I also have a special talent for accidentally adding the wrong ingredient more times than I’d like to admit. And, of course, I have the burn count to prove my dedication.

If it needs to be grilled, he’s on it. If it’s noodles, he’s suddenly a culinary expert. And if food needs tasting? He has no choice. This man acts like it’s his life’s duty to ensure everything is seasoned to perfection—as if I haven’t been feeding him for years.

He doesn’t always measure things. He goes by vibes. And somehow? It always comes out perfect. Meanwhile, I measure, follow the process, and… still manage to burn something.

If we’re making homemade bread, pizza, or literally anything besides grilling and noodles? I take the lead. But if we’re firing up the grill or making noodles, I step back—because trust me, the man knows what he’s doing.

Now, if there’s one dish we own, perfect, and swear by, it’s our Spicy Chicken. Because nothing—and we mean nothing—beats crispy, flavor-packed spicy chicken paired with a good blue cheese.

You think you’ve had good spicy chicken? You haven’t. Not until you’ve had our spicy chicken. It’s the kind of chicken that makes you want to rethink every other meal choice in your life.

The VickerEats Journey & What’s Next

What started as a fun way to bond, argue over spice levels, and test our cooking skills has turned into something bigger.

James’ let’s make everything from scratch idea? Now we’re taking it to the streets.

One day, The VickerEats food truck will be rolling up to serve all these homemade flavors.
Until then, I’ll keep doing most of the work, while James handles the flames, eats everything, and takes credit for “helping.” 🤣🔥
